Ingredients

  • 3 lb. potatoes, cooked in skins, peeled and diced
  • 1/4 c. margarine
  • 3 c. milk
  • 1/8 tsp. pepper
  • 1/2 small onion, diced
  • 5 Tbsp. flour
  • 1 tsp. salt
  • 1 c. grated cheese
  • 1/2 c. grated cheese

Method

  • Melt margarine in saucepan.
  • Add flour and cook until thickened.
  • Slowly add milk, stirring constantly.
  • Add salt and pepper.
  • Stir in 1 cup grated cheese and cook until melted. Arrange potatoes and diced onion in baking dish.
  • Pour cheese sauce over potatoes and sprinkle with remaining cheese.
  • Bake at 375° for 25 minutes.
