Ingredients
- 3 lb. potatoes, cooked in skins, peeled and diced
- 1/4 c. margarine
- 3 c. milk
- 1/8 tsp. pepper
- 1/2 small onion, diced
- 5 Tbsp. flour
- 1 tsp. salt
- 1 c. grated cheese
- 1/2 c. grated cheese
Method
- Melt margarine in saucepan.
- Add flour and cook until thickened.
- Slowly add milk, stirring constantly.
- Add salt and pepper.
- Stir in 1 cup grated cheese and cook until melted. Arrange potatoes and diced onion in baking dish.
- Pour cheese sauce over potatoes and sprinkle with remaining cheese.
- Bake at 375° for 25 minutes.
