Ingredients

  • 1/3 c. butter or margarine, softened
  • 2/3 c. sugar
  • 2 eggs
  • 3 Tbsp. milk
  • 1 tsp. lemon juice
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 c. applesauce
  • 1 c. raisins
  • 2 c. flour

Method

  • I use 2 cups self-rising flour instead of 2 cups of flour and the baking powder and baking soda.
  • Cream the butter, sugar and eggs until light and fluffy, then add lemon juice, milk, applesauce and raisins.
  • Bake in well-greased loaf pan at 350° until done, about 1 hour or until toothpick inserted in center comes out clean.
