Ingredients
- 3 eggs
- 3/4 c. all-purpose flour
- 1/2 tsp. salt
- 1/8 tsp. nutmeg
- 1 c. milk
- 7 Tbsp. butter
- 4 tart apples
- 2 Tbsp. sugar
- 1/2 c. powdered sugar
- 1 lemon, sliced
Method
- Preheat oven to 425°.
- Make a batter of these in blender or food processor.
- Heat 3 tablespoons butter in a heavy cast-iron skillet.
- Pour batter into skillet and put on top rack of oven. Bake until edges are brown and crisp, about 20 minutes.
- Meantime, quarter, core and peel apples.
- Thinly slice them.
- Heat remaining butter in another large skillet.
- Add apple slices; sprinkle with sugar and saute over high heat until apples are browned.
- Spread over pancake, and sprinkle with powdered sugar.
