Ingredients

  • 3 eggs
  • 3/4 c. all-purpose flour
  • 1/2 tsp. salt
  • 1/8 tsp. nutmeg
  • 1 c. milk
  • 7 Tbsp. butter
  • 4 tart apples
  • 2 Tbsp. sugar
  • 1/2 c. powdered sugar
  • 1 lemon, sliced

Method

  • Preheat oven to 425°.
  • Make a batter of these in blender or food processor.
  • Heat 3 tablespoons butter in a heavy cast-iron skillet.
  • Pour batter into skillet and put on top rack of oven. Bake until edges are brown and crisp, about 20 minutes.
  • Meantime, quarter, core and peel apples.
  • Thinly slice them.
  • Heat remaining butter in another large skillet.
  • Add apple slices; sprinkle with sugar and saute over high heat until apples are browned.
  • Spread over pancake, and sprinkle with powdered sugar.
