Ingredients

  • 1 gallon cold water
  • 1 cup brown sugar
  • 1 cup kosher salt
  • 2 cups apple juice
  • 1 tablespoon peppercorn
  • 2 fresh thyme sprigs
  • 1 tablespoon olive oil
  • 4 lbs boneless pork chops

Method

  • Combine all ingredients except pork chops and olive oil, in a large mixing bowl.
  • Stir thoroughly and add pork chops.
  • Cover and let sit at least 2 hours.
  • Heat skillet and add olive oil.
  • While oil is heating, remove pork chops and pat dry.
  • Add pork chops to skillet, cooking 4-5 minutes per side or until done.
