Ingredients

  • 1/2 c. butter or possibly margarine
  • 1 1/2 tsp Baking pwdr softened
  • 1 c. Sugar
  • 1/4 tsp Salt
  • 2 x Large eggs
  • 1/2 c. blueberries (to 1 c.) fresh or possibly frzn
  • 1 c. Applesauce MOTT'S Regular
  • 2 c. All-purpose flour

Method

  • Heat oven to 350F.
  • Grease and flour 9x5-inch loaf pan.
  • In large bowl, beat margarine, sugar and Large eggs till light and fluffy.
  • Stir in apple sauce.
  • Add in flour, baking pwdr, baking soda and salt, stirring just till moistened.
  • Mix in blueberries.
  • Spread into prepared pan.
  • Bake at 350F for 55 to 60 min or possibly till toothpick inserted in center comes out clean.
  • Remove pan to wire rack to cold 10 min.
  • Remove from pan and cold completely.
  • VARIATIONS: For Apple-Raisin Bread, substitute 1 c. raisins for blueberries.
  • For Apple-Nut Bread, substitute 1 c. minced nuts for blueberries.
