Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup flour sifted
  • 1/2 cup sugar
  • 1/2 cup flaked coconut
  • 7 tablespoons butter chopped
  • 1 tablespoon light corn syrup
  • 3 apples peeled, cored and cut into wedges
  • 3 pears peeled, cored and cut into wedges
  • 2 tablespoons sugar
  • 1/2 cup raisins
  • ice cream to serve

Method

  • Preheat the oven to 350°F. Place a large, deep pie plate on a baking pan.
  • For the crumble, combine the oats, flour, sugar and coconut in a medium bowl. Place the butter and corn syrup in a small saucepan on low heat. Stir for 2-3 mins, until melted. Pour into the dry ingredients and mix well. Set aside.
  • For the filling, place the apples, pears and 1/4 cup sugar in a large saucepan on high heat. Bring to a boil. Reduce the heat to low and simmer for 5-10 mins, until just tender. Stir in the raisins. Pour into the pie plate. Sprinkle the crumble mixture evenly over the fruit.
  • Bake for 12-15 mins, until golden. Serve warm with ice cream.
