Ingredients

  • 2 large eggs
  • pinch of cream of tartar
  • 2 Tbsp. sugar
  • 1/2 tsp. vanilla
  • 1/2 c. all-purpose flour, sifted
  • 1 dessert apple, peeled, cored and finely chopped
  • 1/8 c. candied cherries, finely chopped

Method

  • Beat the eggs, cream of tartar, sugar and vanilla together until thick.
  • Fold in the flour and the chopped apple.
  • Divide the mixture between approximately 15 double thicknesses paper cases and sprinkle the cherries over each.
  • Arrange, 5 at a time, in a circle in the microwave and cook for 45 seconds to 1 minute on High, until the cakes are just dry on top.
  • Do not overcook.
