Ingredients
- 2 large eggs
- pinch of cream of tartar
- 2 Tbsp. sugar
- 1/2 tsp. vanilla
- 1/2 c. all-purpose flour, sifted
- 1 dessert apple, peeled, cored and finely chopped
- 1/8 c. candied cherries, finely chopped
Method
- Beat the eggs, cream of tartar, sugar and vanilla together until thick.
- Fold in the flour and the chopped apple.
- Divide the mixture between approximately 15 double thicknesses paper cases and sprinkle the cherries over each.
- Arrange, 5 at a time, in a circle in the microwave and cook for 45 seconds to 1 minute on High, until the cakes are just dry on top.
- Do not overcook.
