- 1 teaspoon apple cider vinegar
- 1 tablespoon dijon mustard
- 1 tablespoon mayonnaise, light
- 1 tablespoon yogurt, plain low-fat
- 1/4 teaspoon honey
- 1 teaspoon tarragon leaves freshly minced, or 1/4 teaspoon dried, crumbled
- 4 stalks celery cut into 1 1/2-inch matchsticks, plus celery leaves for garnish
- 1 each apples crisp and tart, cut into 1 1/2-inch matchsticks
Method
- In a bowl whisk together vinegar, mustard, mayonnaise, yogurt, honey, tarragon, and salt and pepper to taste until the dressing is smooth.
- Add the celery and the apple, tossing all the ingredients together.
- Garnish with the celery leaves before serving.
