Ingredients

  • 8 cups of fruit
  • 2 cups of water or juice
  • 4 tablespooons of lemon juice
  • 2 cups of sugar
  • 2/3 cups of cornstarch
  • 1 egg for wash
  • sugar

Method

  • Put fruit and water in a saucepan, simmer unitl the fruit is tender.
  • Mix the sugar and the cornstarch together and add to the fruit and bring to the boil untill the mixture is thick.Allow to cool.
  • Add the cold fruit filling to the pie shell.Brush egg wash on the rim of the bottom crust and place on the pie lid.Trim the edges and crimp the edges.Finish with an egg wash and sprinkle with sugar.
  • Bake at 375 F
