Ingredients
- 2 c. flour
- 3/4 c. sugar
- 1/4 lb. butter or margarine
- 3 lb. (approximately) prune plums
- 1 tsp. vanilla
- 1/2 tsp. baking powder
- 2 eggs
- 1/4 c. sugar
Method
- Cream the butter and sugar together, then add eggs until smooth.
- Stir in sifted flour and baking powder and add vanilla. The batter will be thick.
- Spread into a baking pan (9 x 13-inch), ungreased.
- Cut plums in half, removing pits and rinse.
- When dry, place plums, skin side down, on top of batter until it is covered. (I find it usually takes about 21 plums to cover the whole pan, 42 halves, 6 across and seven down).
- Sprinkle with 1/4 cup sugar and bake in 350° oven for 1/2 to 3/4 hour until batter is browning on the edges.
- If the plums are properly ripened, they will create a syrupy glaze over the cake.
- This cake is like nothing else I've ever tasted.
