Ingredients

  • 2 avocados, diced
  • 1 cup corn kernel
  • 1 cup shelled edamame
  • 1 cup black beans
  • 1 cup kidney bean
  • 1 large tomatoes, diced
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 1 tablespoon agave nectar or 1 tablespoon honey
  • 3 tablespoons olive oil
  • 1/4 cup vinegar (balsamic or red wine work well)
  • 1 tablespoon cumin
  • 1 tablespoon garlic powder (or chopped fresh garlic!)
  • 1 tablespoon chili powder
  • 1 -2 teaspoon black pepper
  • 1 dash salt
  • 1 -2 teaspoon hot sauce (to taste)

Method

  • Mix all of the ingredients together.
  • Serve with tortilla chips.
