Ingredients

  • 1 large shallot minced
  • 2 garlic cloves minced
  • 2 tbsp olive oil
  • 8 ounces white mushrooms (1 box)
  • 8 ounces crimini mushrooms(or any
  • other earthy tasting mushroom)
  • 1/4 cup low sodium chicken broth
  • 1 box angel hair pasta can be whole wheat pasta)
  • 1 pkg garlic and herb light cheese spread
  • 2 ounces whole milk
  • 2 ounces parsley
  • salt and pepper

Method

  • 1. Saute shallot and garlic in olive oil in saucepan.
  • 2. Add cleaned and sliced mushrooms to saucepan.
  • 3. Deglaze pan with chicken broth.
  • 4. Add cheese spread and milk and stir.
  • 5. Add salt and pepper.
  • 6. Sprinle with chopped parsley.
  • Variations:
  • sometimes I don't use chicken broth instead I use low sodium soy sauce.
  • sometimes I don't use cheese spread instead I just use milk and parmesan cheese.
  • Sometimes I add frozen peas instead of parsley
