Ingredients
- 1/3 cup mayonnaise
- 1/4 teaspoon salt
- 1/4 teaspoon curry powder
- 1/4 teaspoon pepper
- 2 cups minced cooked chicken
- 1/2 cup blanched almonds, chopped
- 2 (16-ounce) loaves white bread
- Pimiento strips (optional)
Method
- Combine first 4 ingredients, mixing well. Add chicken and almonds; mix well.
- Remove crust from bread, and cut into rounds with a 2 1/2-inch cookie cutter; slice each round in half, and spread with chicken mixture. Garnish with pimiento strips, if desired.
