Ingredients

  • 1/3 cup mayonnaise
  • 1/4 teaspoon salt
  • 1/4 teaspoon curry powder
  • 1/4 teaspoon pepper
  • 2 cups minced cooked chicken
  • 1/2 cup blanched almonds, chopped
  • 2 (16-ounce) loaves white bread
  • Pimiento strips (optional)

Method

  • Combine first 4 ingredients, mixing well. Add chicken and almonds; mix well.
  • Remove crust from bread, and cut into rounds with a 2 1/2-inch cookie cutter; slice each round in half, and spread with chicken mixture. Garnish with pimiento strips, if desired.
