Ingredients

  • 2 c. mint
  • 2 tbsp. roasted salted almonds
  • 1 clove garlic
  • 1/2 tsp. freshly grated lemon peel
  • 1 tbsp. fresh lemon juice
  • 1/4 tsp. salt
  • 1/4 tsp. Pepper
  • 13 c. extra-virgin olive oil

Method

  • In a food processor, pulse mint, roasted salted almonds, garlic, freshly grated lemon peel, fresh lemon juice, and salt and pepper until coarsely chopped.
  • With the processor running, add extra-virgin olive oil; puree until coarsely ground.
  • Toss with 1 pound cooked pasta or serve with grilled chicken.
