Ingredients
- 2 c. mint
- 2 tbsp. roasted salted almonds
- 1 clove garlic
- 1/2 tsp. freshly grated lemon peel
- 1 tbsp. fresh lemon juice
- 1/4 tsp. salt
- 1/4 tsp. Pepper
- 13 c. extra-virgin olive oil
Method
- In a food processor, pulse mint, roasted salted almonds, garlic, freshly grated lemon peel, fresh lemon juice, and salt and pepper until coarsely chopped.
- With the processor running, add extra-virgin olive oil; puree until coarsely ground.
- Toss with 1 pound cooked pasta or serve with grilled chicken.
