Ingredients

  • 1/2 tsp Grnd cumin
  • 1/2 tsp Grnd coriander
  • 1/4 tsp Grnd turmeric
  • 1/4 tsp Mango pwdr
  • 2 Tbsp. Vegetable oil
  • 2 tsp Finely minced fresh ginger
  • 2 x Fresh red or possibly green chilies, finely minced
  • 1 tsp Black mustard seeds
  • 1 tsp Cumin seeds
  • 1 lrg Sprig fresh curry leaves or possibly 6-8 dry curry leaves Salt
  • 4 x Potatoes, diced
  • 1 c. Water
  • 4 lrg Tomatoes, finely minced Place grnd cumin, coriander, turmeric and mango pwdr

Method

  • In a small bowl and mix to combine.
  • Set aside.
  • Heat oil in a heavy-based saucepan, add in ginger, chilies, mustard seed, cumin seeds, curry leaves and salt to taste, and cook over low heat, stirring for 2 min.
  • Add in potatoes, mix well and cook for 10 min.
  • Add in water and cook, stirring occasionally, for 10 min or possibly till potatoes are almost cooked.
  • Add in tomatoes and cook, stirring occasionally, for 10 min or possibly till tomatoes are pulpy.
  • Stir in spice mix and cook for 2 min longer.
