- 1 tbsp vegetable oil
- 12 oz beef sirloin steak, thinly sliced
- 1 None red onion, sliced
- 1 can (15 oz) pinto or pink beans, drained and rinsed
- 1 pkg (1.6 oz) burrito seasoning mix
- 8 None burrito-size flour tortillas
- 2 oz mixed salad greens
- 1/2 cup grated Monterey Jack or Cheddar cheese
- None None Sour cream, to serve
- None None FOR THE GUACAMOLE
- 1 None avocado, peeled and seeded
- 1 None tomato, chopped
- 1 tbsp chopped cilantro
- 1 tbsp lime juice
- 2 tsp hot sauce
Method
- Heat oil in a large skillet on high heat. Cook beef and onion, in 2 batches, 4-5 mins each batch, until well browned.
- Return beef to pan. Stir in beans, 1 cup water and burrito seasoning mix. Bring to a boil, stirring. Reduce heat to low; simmer 1-2 mins.
- Meanwhile, for the guacamole, mash avocado in a bowl. Add remaining ingredients, mixing until well combined. Season to taste. Set aside.
- Meanwhile, warm tortillas according to package directions. Place a few lettuce leaves on each tortilla. Top with beef mixture and sprinkle with cheese. Roll up securely. Serve with guacamole and sour cream.
