Ingredients

  • 6 Tbsp. unsalted butter
  • 2/3 c. heavy cream
  • 1 c. freshly-grated Parmesan cheese
  • 1/2 tsp salt Freshly-grnd white pepper to taste
  • 1 dsh grnd nutmeg

Method

  • Place butter and cream in large skillet over medium-low heat.
  • Cook and stir till butter melts and mix bubbles; cook and stir 2 min more.
  • Stir in salt, pepper and nutmeg.
  • Remove from heat.
  • Gradually stir in cheese till thoroughly blended and smooth.
  • Return briefly to heat to completely blend cheese, but don't let sauce bubble or possibly cheese will become lumpy and tough.
  • This recipe yields 4 servings;
