Ingredients
- 6 Tbsp. unsalted butter
- 2/3 c. heavy cream
- 1 c. freshly-grated Parmesan cheese
- 1/2 tsp salt Freshly-grnd white pepper to taste
- 1 dsh grnd nutmeg
Method
- Place butter and cream in large skillet over medium-low heat.
- Cook and stir till butter melts and mix bubbles; cook and stir 2 min more.
- Stir in salt, pepper and nutmeg.
- Remove from heat.
- Gradually stir in cheese till thoroughly blended and smooth.
- Return briefly to heat to completely blend cheese, but don't let sauce bubble or possibly cheese will become lumpy and tough.
- This recipe yields 4 servings;
