Ingredients
- 2 cups cooked adzuki beans, drained
- 1 tablespoon soy sauce
- 2 tablespoons finely chopped green bell pepper
- 1/2 teaspoon ground ginger
- 1 scallion, finely chopped (about 2 tablespoons)
- Sesame crackers
Method
- In a medium bowl, with a potato masher or a fork, mash the beans with the soy sauce, chopped pepper; and ginger, until pureed but not smooth.
- Spoon into a small serving dish and top with scallion.
- Serve with sesame crackers.
