Ingredients

  • 1 1/4 cups flour, all-purpose
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon ground
  • 1/4 teaspoon salt
  • 1/4 cup butter or margarine
  • 1 each eggs beaten
  • 1/2 cup applesauce
  • 13 cup molasses light
  • 1/4 cup raisins, seedless
  • 3/4 cup powdered sugar sifted
  • 4 teaspoons lemon juice

Method

  • In a medium mixing bowl combine flour, baking soda, cinnamon, and salt.
  • Cut in butter or margarine until the mixture resembles coarse crumbs.
  • In a small mixing bowl stir together egg, applesauce, and molasses; stir into flour mixture just until moistened.
  • Stir in raisins.
  • Turn into a greased and floured 8x8x2-inch baking pan.
  • Bake in a 350F (180C) oven for 25 to 30 minutes or until a wooden toothpick inserted in the center comes out clean.
  • Cool in the pan 15 minutes.
  • Remove from pan, if desired.
  • Combine powdered sugar and lemon juice; spread over warm cake.
  • Serve warm or cool.
