Ingredients
- 4 veal cutlets (3/4 to 1-inch thick)
- 2 Tbsp. melted butter
- salt
- 3 eggs, slightly beaten
- pepper
- 2 c. fine sifted cracker crumbs
- 1/3 c. butter
- 1 1/3 c. sweet cream
- 2/3 c. rich milk
Method
- Rub cutlets with melted butter, then sprinkle with salt and pepper.
- Roll cutlets in cracker crumbs; dip into beaten eggs, then back into crumbs.
- Melt butter in shallow pan and cook cutlets to a golden brown on both sides.
- Pour cream and milk over cutlets.
- Cover pan tightly and cook in 300° oven for 1 hour. Remove meat.
- Thicken sauce in pan with a few fine cracker crumbs and serve hot.
