Ingredients

  • 4 veal cutlets (3/4 to 1-inch thick)
  • 2 Tbsp. melted butter
  • salt
  • 3 eggs, slightly beaten
  • pepper
  • 2 c. fine sifted cracker crumbs
  • 1/3 c. butter
  • 1 1/3 c. sweet cream
  • 2/3 c. rich milk

Method

  • Rub cutlets with melted butter, then sprinkle with salt and pepper.
  • Roll cutlets in cracker crumbs; dip into beaten eggs, then back into crumbs.
  • Melt butter in shallow pan and cook cutlets to a golden brown on both sides.
  • Pour cream and milk over cutlets.
  • Cover pan tightly and cook in 300° oven for 1 hour. Remove meat.
  • Thicken sauce in pan with a few fine cracker crumbs and serve hot.
