Ingredients

  • 1 package whole wheat Acieni de Pepe Pasta
  • 2 tbsp. olive oil
  • 1/2 stick sweet butter
  • 1 small red onion
  • 4 clove garlic
  • 2 tomatoes
  • 1 small head cabbage
  • .67 c. pine nuts
  • 13 c. chicken stock
  • 3/4 c. goat cheese

Method

  • Cook pasta according to package directions.
  • In a large saute pan add oil and butter.
  • Add onions and garlic on high heat and saute about 5 minutes.
  • Add rest of vegetables and pine nuts, and cook for 15 minutes on medium to high heat.
  • Add chicken stock and goat cheese.
  • Toss pasta in with vegetables and serve.
