Ingredients
- 1-14 oz can Stewed tomatoes (Italian Style optional)
- I small basket of cherry tomatoes
- 2 oz sun dried tomato strips
- 3 cloves of garlic
- olive oil
- oregano, basil, salt & crushed red pepper to taste
- Angel Hair Pasta (or another favorite)
Method
- Saute minced garlic in olive oil in large pan. When lightly golden, add undrained stewed and sundried tomatoes, herbs & spices.
- Bring to a light simmer, stirring frequently. Sauce will reduce down to a thicker consistancy. When desired thickness is almost reached, add cherry tomatoes cut in half. Simmer for 1 - 2 more minutes & serve over freshly prepared pasta.
- Freshly grated parmesean cheese added on top makes this dish extra yummy.
