Ingredients
- 1 c. sifted flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 stick butter
- 1 egg
- 1/2 c. honey
- 3/4 c. grated, raw carrots, firmly packed
- 1/2 c. quick cooking oatmeal
- 1/2 c. raisins
- 3/4 c. walnuts (medium size pieces)
Method
- Sift together the flour, baking powder, baking soda and salt. Set aside.
- In large bowl, cream butter; add the egg and beat. Beat in honey and then the carrots.
- On low speed, add dry ingredients and then the oatmeal.
- When thoroughly mixed, stir in raisins and walnuts.
- Place dough by teaspoonfuls about 2 inches apart on cookie sheet.
- Bake about 15 minutes at 350°.
- Cookies are done when golden colored and the tops spring back if touched with fingertips.
