Ingredients

  • 1 c. sifted flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 stick butter
  • 1 egg
  • 1/2 c. honey
  • 3/4 c. grated, raw carrots, firmly packed
  • 1/2 c. quick cooking oatmeal
  • 1/2 c. raisins
  • 3/4 c. walnuts (medium size pieces)

Method

  • Sift together the flour, baking powder, baking soda and salt. Set aside.
  • In large bowl, cream butter; add the egg and beat. Beat in honey and then the carrots.
  • On low speed, add dry ingredients and then the oatmeal.
  • When thoroughly mixed, stir in raisins and walnuts.
  • Place dough by teaspoonfuls about 2 inches apart on cookie sheet.
  • Bake about 15 minutes at 350°.
  • Cookies are done when golden colored and the tops spring back if touched with fingertips.
