Ingredients
- 1 lb. vanilla wafers
- 1/2 c. butter (only)
- 1 1/2 c. confectioners sugar, sifted
- 3 whole eggs, unbeaten
- 1/2 c. crushed pineapple, drained (almost squeezed)
- 1 c. whipped cream
Method
- Crush wafers; put 1/2 in bottom of 9 x 13-inch pan.
- Cream butter and sugar well.
- Add one egg at a time, beating well after each addition.
- Pour mixture over crumbs in pan.
- Fold pineapple into whipped cream and spread over mixture in pan.
- Top with other 1/2 of crumbs.
- Chill for at least 24 hours.
- Cut into squares. Serve with whipped cream and a cherry, if desired.
