Ingredients

  • 1 lb. vanilla wafers
  • 1/2 c. butter (only)
  • 1 1/2 c. confectioners sugar, sifted
  • 3 whole eggs, unbeaten
  • 1/2 c. crushed pineapple, drained (almost squeezed)
  • 1 c. whipped cream

Method

  • Crush wafers; put 1/2 in bottom of 9 x 13-inch pan.
  • Cream butter and sugar well.
  • Add one egg at a time, beating well after each addition.
  • Pour mixture over crumbs in pan.
  • Fold pineapple into whipped cream and spread over mixture in pan.
  • Top with other 1/2 of crumbs.
  • Chill for at least 24 hours.
  • Cut into squares. Serve with whipped cream and a cherry, if desired.
