Ingredients

  • 2 tablespoons olive oil
  • 12 cup onion, chopped
  • 4 cups chicken broth
  • 12 cup fresh parsley, chopped
  • 12 teaspoon hot pepper flakes
  • 12 cup carrot, diced
  • 12 cup mushroom, diced
  • 12 cup green beans, chopped
  • 12 cup garbanzo beans
  • 12 cup cooked rice or 12 cup cooked orzo pasta
  • 12 cup cooked chicken, diced
  • 12 cup celery, diced
  • 12 cup zucchini, diced
  • 12 cup green peas
  • salt and pepper, to taste

Method

  • Heat oil in small Dutch oven.
  • Saute vegetables until tender.
  • Add chicken broth and heat to simmer.
  • Add remaining beans, rice or pasta if using.
  • Heat to simmer.
  • Add parsley and pepper flakes.
  • Add salt and pepper to taste.
  • Serve at once.
