Ingredients

  • 1 medium onion, chopped
  • 1/4 c. butter
  • 4 medium zucchini, chopped
  • 1/4 lb. mushrooms
  • 3 medium tomatoes, sliced
  • 3 Tbsp. chopped parsley
  • 1/4 c. grated Parmesan cheese
  • 1/2 tsp. sweet basil
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. garlic powder
  • 1 c. shredded Cheddar cheese

Method

  • Melt butter in skillet.
  • Add onion, zucchini and mushrooms. Cook for 5 minutes.
  • Add tomato slices and all other ingredients except the Cheddar cheese.
  • Cook 4 minutes.
  • Remove from heat and sprinkle shredded Cheddar on top.
  • Serves 6.
