Ingredients

  • 10 c. grated zucchini
  • 4 c. chopped onions
  • 5 tsp. salt
  • 2 green peppers
  • 2 red peppers
  • 5 c. sugar
  • 1/2 tsp. pepper
  • 1/2 tsp. alum
  • 2 tsp. celery seed
  • 2 1/2 c. cider vinegar
  • 1/2 tsp. turmeric
  • 1 tsp. dry mustard

Method

  • Pour zucchini, onions, salt and peppers in pan and let stand overnight or 3 to 4 hours.
  • Mix together remaining ingredients. Bring this to a boil, then add zucchini, peppers and onions.
  • Let simmer 30 minutes.
  • Place in sterilized jars at once.
  • You may process in hot water bath for 5 minutes.
  • Makes 5 pints.
