- 10 c. grated zucchini
- 4 c. chopped onions
- 5 tsp. salt
- 2 green peppers
- 2 red peppers
- 5 c. sugar
- 1/2 tsp. pepper
- 1/2 tsp. alum
- 2 tsp. celery seed
- 2 1/2 c. cider vinegar
- 1/2 tsp. turmeric
- 1 tsp. dry mustard
Method
- Pour zucchini, onions, salt and peppers in pan and let stand overnight or 3 to 4 hours.
- Mix together remaining ingredients. Bring this to a boil, then add zucchini, peppers and onions.
- Let simmer 30 minutes.
- Place in sterilized jars at once.
- You may process in hot water bath for 5 minutes.
- Makes 5 pints.
