Ingredients

  • 4 c. sliced zucchini
  • 1 c. chopped onions
  • 1 can crescent rolls (8 oz.)
  • 2 c. shredded Mozzarella
  • 2 eggs, beaten
  • 1 stick margarine
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. garlic powder
  • 1/4 tsp. basil
  • 1/4 tsp. oregano
  • 2 Tbsp. mustard
  • 2 Tbsp. parsley

Method

  • Saute zucchini and onions until tender, about 10 minutes.
  • Add spices.
  • Combine eggs and vegetable mixture.
  • Lay crescent rolls in quiche dish to form crust.
  • Rub with mustard.
  • Pour mixture over crust.
  • Bake as you would crescent rolls.
