- 4 c. sliced zucchini
- 1 c. chopped onions
- 1 can crescent rolls (8 oz.)
- 2 c. shredded Mozzarella
- 2 eggs, beaten
- 1 stick margarine
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. garlic powder
- 1/4 tsp. basil
- 1/4 tsp. oregano
- 2 Tbsp. mustard
- 2 Tbsp. parsley
Method
- Saute zucchini and onions until tender, about 10 minutes.
- Add spices.
- Combine eggs and vegetable mixture.
- Lay crescent rolls in quiche dish to form crust.
- Rub with mustard.
- Pour mixture over crust.
- Bake as you would crescent rolls.
