Ingredients
- 4 or 5 small zucchini, thinly sliced (about 3 c.)
- 2 Tbsp. butter
- 1/2 tsp. salt
- dash of pepper
- 2 Tbsp. grated Parmesan cheese
Method
- Put zucchini, butter and seasonings in skillet.
- Cover; cook slowly 5 minutes.
- Uncover; cook, turning slices until barely tender, about 5 minutes more.
- Sprinkle with cheese; toss.
- Makes 4 servings.
