Ingredients

  • 8 oz. lasagne noodles
  • 1/2 lb. ground beef
  • 1/4 c. chopped onion
  • 6 oz. tomato paste
  • 8 oz. tomato sauce
  • 1/2 c. mushroom pieces
  • 1 clove garlic, minced
  • 1 tsp. basil, crushed
  • 1 tsp. parsley flakes
  • 1 tsp. salt
  • 1/2 tsp. oregano
  • 1/4 tsp. pepper
  • 2 c. cottage cheese
  • 1 c. diced zucchini
  • 1 egg
  • 1 c. shredded Mozzarella cheese
  • grated Parmesan cheese

Method

  • Cook noodles; drain.
  • Brown beef and onions in skillet.
  • Add tomato paste, tomato sauce, mushrooms, garlic, basil, parsley, salt, pepper and oregano.
  • Simmer for 1 hour.
  • Combine cottage cheese, zucchini and egg.
  • In large baking dish, alternate layers of noodles, cottage cheese mixture, meat mixture and Mozzarella cheese.
  • Bake at 350° for 30 minutes.
  • Sprinkle with Parmesan cheese after removing from oven.
