Ingredients
- 3 c. zucchini squash, cubed
- 1 1/2 c. stuffing mix
- 1/2 c. margarine, melted
- 1 can cream of chicken soup
- 1/2 c. sour cream
- 1 carrot, grated
- 1 medium onion, diced small
- 1/2 c. Cheddar cheese, cubed small
- salt and pepper to taste
Method
- Cook cubed zucchini with skin on in salted water until soft, about 7 minutes. Drain well.
