Ingredients
- 3 eggs, beaten
- 1 c. vegetable oil
- 2 c. sugar
- 2 tsp. vanilla
- 2 c. self-rising flour
- 3 tsp. cinnamon
- 2 c. zucchini, unpeeled and coarsely grated
- 1 c. nuts (optional)
Method
- Combine eggs, oil, sugar and vanilla.
- Mix well.
- Combine dry ingredients and add to oil mixture, mixing well.
- Stir in grated zucchini.
- Add nuts.
- Pour into a greased and floured Bundt pan. Bake at 350° for 55 to 60 minutes.
- Allow to cool for 20 minutes before removing from pan.
