Ingredients
- 3 eggs
- 2 c. sugar
- 1 c. vegetable oil
- 1 Tbsp. vanilla
- 1 Tbsp. cinnamon
- 1 c. coarsely grated zucchini
- 2 c. self-rising flour
Method
- Beat eggs until frothy.
- Add sugar, oil, vanilla and cinnamon, beating 1 minute with mixer.
- Stir in the zucchini and flour. Bake at 350° for 55 to 60 minutes in a greased and floured Bundt or tube pan.
- Cool and sprinkle with powdered sugar.
