Ingredients

  • 2 c. shredded or grated zucchini
  • 2 c. sugar
  • 1 c. cooking oil
  • 3 eggs
  • 1 tsp. vanilla
  • 1 c. chopped nuts (optional)
  • 1/2 c. raisins (optional)
  • 3 c. flour
  • 1/4 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. each: cinnamon, ginger and ground cloves

Method

  • Preheat oven to 325°.
  • Combine zucchini, sugar, oil, eggs and vanilla. Mix well.
  • (I do this in the blender.)
  • Sift together flour, baking powder, baking soda, salt and spices.
  • Add to liquid mixture.
  • Mix well.
  • Add chopped nuts and raisins.
  • Grease and flour 2 loaf pans.
  • Bake for 1 hour.
  • Cool for 20 minutes.
  • Remove from pans.
