Ingredients
- pastry for 2 crust pie
- 5 c. sliced zucchini, cooked until tender-crisp
- 2 Tbsp. lemon juice
- 1/2 tsp. salt (if desired)
- 1 1/4 c. sugar
- 1 1/2 tsp. cinnamon
- 1 1/2 tsp. cream of tartar
- dash of nutmeg
- 3 Tbsp. flour
Method
- Make pastry.
- Use big zucchini, but still tender enough that you can pierce skin with fingernail.
- Peel, cut in quarters, remove seeds and cut into apple slice sizes.
- Toss together the zucchini, lemon juice and salt.
- Mix remaining ingredients in a large bowl.
- Add zucchini mixture to bowl and mix well.
- (It will be runny.)
- Dump the filling into a 9-inch unbaked crust.
- Dot with butter or margarine.
- Add top crust.
- Bake at 400° for 40 minutes or until golden brown.
- You won't believe how delicious this pie is!
- Serves 8.
