Ingredients

  • pastry for 2 crust pie
  • 5 c. sliced zucchini, cooked until tender-crisp
  • 2 Tbsp. lemon juice
  • 1/2 tsp. salt (if desired)
  • 1 1/4 c. sugar
  • 1 1/2 tsp. cinnamon
  • 1 1/2 tsp. cream of tartar
  • dash of nutmeg
  • 3 Tbsp. flour

Method

  • Make pastry.
  • Use big zucchini, but still tender enough that you can pierce skin with fingernail.
  • Peel, cut in quarters, remove seeds and cut into apple slice sizes.
  • Toss together the zucchini, lemon juice and salt.
  • Mix remaining ingredients in a large bowl.
  • Add zucchini mixture to bowl and mix well.
  • (It will be runny.)
  • Dump the filling into a 9-inch unbaked crust.
  • Dot with butter or margarine.
  • Add top crust.
  • Bake at 400° for 40 minutes or until golden brown.
  • You won't believe how delicious this pie is!
  • Serves 8.
