Ingredients

  • 4 c. zucchini, sliced
  • dash of salt
  • 2 Tbsp. lemon juice
  • 1 1/4 c. sugar
  • 1 1/2 tsp. cinnamon
  • 1 1/2 tsp. cream of tartar
  • dash of nutmeg
  • 3 Tbsp. flour
  • crust for 9-inch pie

Method

  • Use large (tender) zucchini.
  • Peel and cut in quarters lengthwise.
  • Remove seeds and slice crosswise.
  • These will resemble apple slices.
  • Cook until just tender-crisp.
  • Drain. Toss with dash of salt and 2 tablespoons lemon juice.
  • Have mixed in a bowl the sugar, cinnamon, cream of tartar, dash of nutmeg and flour. Add zucchini.
  • Place in 9-inch rich crust.
  • Dot with butter.
  • Add top crust. Bake at 400° for 40 minutes or until golden brown.
