Ingredients
- 4 c. zucchini, sliced
- dash of salt
- 2 Tbsp. lemon juice
- 1 1/4 c. sugar
- 1 1/2 tsp. cinnamon
- 1 1/2 tsp. cream of tartar
- dash of nutmeg
- 3 Tbsp. flour
- crust for 9-inch pie
Method
- Use large (tender) zucchini.
- Peel and cut in quarters lengthwise.
- Remove seeds and slice crosswise.
- These will resemble apple slices.
- Cook until just tender-crisp.
- Drain. Toss with dash of salt and 2 tablespoons lemon juice.
- Have mixed in a bowl the sugar, cinnamon, cream of tartar, dash of nutmeg and flour. Add zucchini.
- Place in 9-inch rich crust.
- Dot with butter.
- Add top crust. Bake at 400° for 40 minutes or until golden brown.
