Ingredients

  • 1 tsp orange zest
  • 2 tbsp orange juice
  • 1 tbsp powdered sugar
  • 1/4 lb raspberries
  • 1/4 lb blueberries
  • 1/2 lb strawberries, quartered
  • 6 None egg yolks
  • 1/3 cup granulated sugar
  • 1/2 cup marsala

Method

  • Combine orange zest, orange juice and powdered sugar. Add berries and toss to combine. Set aside to macerate.
  • Meanwhile, to make the zabaglione, whisk egg yolks and sugar over a double boiler until starting to thicken. Slowly whisk in marsala. Cook, whisking, for 10 mins, or until soft peaks form and mixture has tripled in size and is thick and glossy.
  • Distribute berries between serving glasses and cover with zabaglione.
