Ingredients

  • 1 prime rib of beef
  • 2 c. flour
  • 1 tsp. salt
  • 2 c. milk
  • 4 eggs

Method

  • Roast the prime rib of beef according to cooking instructions. While meat cooks, sift together flour and salt.
  • Stir in milk, beating vigorously until smooth.
  • Add the eggs, one at a time, beating 1 minute after each egg.
  • Chill 2 hours.
  • Half an hour before roast is done, put 1/4 cup of beef drippings in a roasting pan.
  • Set in the oven until sizzling hot.
  • Cook pudding 15 minutes in oven at 350° or until golden and crisp at edges.
  • Add some dripping and use the rest for gravy.
