Ingredients
- 1 carrot, peeled and sliced
- 1 celery, sliced
- 1 small onion, peeled and sliced
- 2 sprigs parsley, chopped
- 2 tablespoons butter
- 2 lbs fish fillets
- 1 cup white wine
- salt and pepper, to taste
Method
- Slice the vegetables, and simmer in butter until nearly done.
- Cut fish fillets in serving pieces and arrange over vegetables.
- Pour on the wine, and season.
- Cook covered over low heat until fish is tender and sauce is slightly thickened.
