Ingredients
- 3 to 4 lb. chicken
- boiling water
- 1/2 c. chopped onion
- 1 c. celery, cut
- 1 c. carrots, cut
- salt and pepper
- 3 Tbsp. chicken fat or butter
- 4 Tbsp. flour
- 2 c. chicken stock
Method
- Clean and cut chicken at the joints.
- Put in large kettle; add water to cover chicken completely.
- Bring to a boil and let simmer for 30 minutes.
- Add onion, celery and carrots; season to taste. Continue to simmer for about 2 hours.
- Remove chicken and vegetables.
- Strain stock; remove all fat and measure stock. There should be 2 to 3 cups.
