Ingredients

  • 3 to 4 lb. chicken
  • boiling water
  • 1/2 c. chopped onion
  • 1 c. celery, cut
  • 1 c. carrots, cut
  • salt and pepper
  • 3 Tbsp. chicken fat or butter
  • 4 Tbsp. flour
  • 2 c. chicken stock

Method

  • Clean and cut chicken at the joints.
  • Put in large kettle; add water to cover chicken completely.
  • Bring to a boil and let simmer for 30 minutes.
  • Add onion, celery and carrots; season to taste. Continue to simmer for about 2 hours.
  • Remove chicken and vegetables.
  • Strain stock; remove all fat and measure stock. There should be 2 to 3 cups.
