Ingredients

  • 1 c. sifted all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground allspice
  • 1 c. whole wheat flour
  • 2 eggs
  • 2/3 c. vegetable oil
  • 1/4 c. honey
  • 1/2 tsp. lemon extract
  • 1 1/2 c. shredded zucchini
  • 1/2 c. chopped nuts
  • 1/4 c. raisins
  • 1 tsp. sesame seed (optional)

Method

  • Sift all-purpose flour, baking powder, baking soda, salt, cinnamon and allspice.
  • Stir in whole wheat flour.
  • Beat eggs, oil, honey and lemon extract with rotary beater until smooth and frothy.
  • Stir in zucchini.
  • Add flour mixture; stir well, but do not beat.
  • Stir in nuts and raisins.
  • Turn into a greased 9 x 5 x 3-inch loaf pan.
  • Sprinkle with sesame seed.
  • Bake in a 325° oven for 1 hour, or until toothpick inserted in center comes out clean. Makes 1 loaf.
