Ingredients

  • 1 pkg. active dry yeast
  • 1 3/4 c. warm water (105~ to 115~)
  • 1/2 tsp. salt
  • 1/4 c. olive oil
  • 2 1/2 c. all-purpose flour
  • 2 c. whole wheat flour

Method

  • Dissolve yeast in warm water in warm mixing bowl. Add salt, olive oil and all-purpose flour.
  • Mix 2 minutes.
  • Continue to mix and add whole wheat flour, 1/2 cup at a time, until dough clings to the mixer.
  • Knead dough for a few minutes.
  • Place in greased bowl, turning to grease top.
  • Cover and let rise in warm place, free from draft, until doubled in bulk, about 1 hour.
  • Punch dough down.
  • Let rest 10 minutes. Divide dough in half.
  • (Dough can be wrapped in plastic wrap and refrigerated overnight or frozen for later use.)
