Ingredients

  • 2 tsp lemon juice
  • 1 cup milk
  • 1/2 cup oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cup self raising flour
  • 2/3 cup castor sugar
  • 1 cup white chocolate, chopped
  • 200 grams berries, fresh or frozen

Method

  • Preheat oven to 190C.
  • Sift the flour into mixing bowl.
  • Add the castor sugar, white chocolate and berries.
  • Stir to combine.
  • Note: You can use whatever combination of berries you want.
  • I like to use strawberries and raspberries.
  • In a separate bowl, whisk together the lemon juice, milk, oil, egg and vanilla.
  • Add wet ingredients to the dry ingredients and stir to combine.
  • Do not overmix.
  • Spoon mixture into prepared muffin pans.
  • It should make 12-14 large muffins.
  • Bake for 25 minutes.
  • To test, press the middle of the muffins lightly; it should spring back.
  • Cool on a wire rack.
