Ingredients

  • 1-1/2 cup Unsalted Butter, Softened
  • 1/2 cups Dark Brown Sugar
  • 1/2 cups White Sugar
  • 1 whole Egg
  • 1 teaspoon Vanilla Extract
  • 1-1/2 cup All-purpose Flour
  • 1/2 teaspoons Baking Powder
  • 1/2 teaspoons Baking Soda
  • 1/2 teaspoons Salt
  • 3/4 cups Rolled Oats
  • 1 cup White Chocolate Chips
  • 1/2 cups Almonds, Chopped

Method

  • 1. Preheat oven to 350°F and lightly grease 2 baking sheets.
  • 2. In a medium bowl cream butter, dark brown sugar, and white sugar. Then, stir in the egg and vanilla. Set aside.
  • 3. In a separate bowl, sift (or whisk together) the flour, baking powder, baking soda, and salt.
  • 4. Gently incorporate dry ingredients into wet ingredients.
  • 5. Add oats, white chocolate, and chopped almonds to the dough and mix until just incorporated.
  • 6. Use a cookie scoop (approximately 1 Tablespoon sized) to scoop the batter onto the prepared tray. Using a scoop will help to ensure even sized cookies. Leave about 2 inches between each cookie on the sheet.
  • 7. Bake or 10-12 minutes. Allow to rest 1-2 minutes on cookie sheet and then remove them from the pan and allow them to finish cooling on wire rack.
