Ingredients

  • 2 Tbsp. vegetable oil
  • 1 medium white onion
  • 1 can chopped green chilies (4 oz.)
  • 2 tsp. garlic powder
  • 2 tsp. salt
  • 2 tsp. ground cumin
  • 2 tsp. ground oregano
  • 2 tsp. ground coriander
  • 1/2 tsp. cayenne pepper
  • 2 (15.8 oz.) cans Great Northern beans (undrained)
  • 2 (10 1/2 oz.) cans chicken broth
  • 2 (5 oz.) cans chicken, drained

Method

  • In a pan, heat oil over medium heat.
  • Add finely chopped onion; saute until brown.
  • In a large stockpot, add onions and next 7 ingredients; stir until well blended.
  • Stir in remaining ingredients.
  • Bring to a boil; reduce heat to low.
  • Simmer 15 to 20 minutes or until heated through.
  • Serves 8 to 10.
