- 2 Tbsp. vegetable oil
- 1 medium white onion
- 1 can chopped green chilies (4 oz.)
- 2 tsp. garlic powder
- 2 tsp. salt
- 2 tsp. ground cumin
- 2 tsp. ground oregano
- 2 tsp. ground coriander
- 1/2 tsp. cayenne pepper
- 2 (15.8 oz.) cans Great Northern beans (undrained)
- 2 (10 1/2 oz.) cans chicken broth
- 2 (5 oz.) cans chicken, drained
Method
- In a pan, heat oil over medium heat.
- Add finely chopped onion; saute until brown.
- In a large stockpot, add onions and next 7 ingredients; stir until well blended.
- Stir in remaining ingredients.
- Bring to a boil; reduce heat to low.
- Simmer 15 to 20 minutes or until heated through.
- Serves 8 to 10.
