Ingredients
- 3 c. sifted flour
- 1/2 tsp. salt
- 2 c. sugar
- 1 tsp. lemon flavoring
- 1 tsp. vanilla flavoring
- 3 tsp. baking powder
- 3/4 c. shortening
- 1/2 c. milk plus 1/2 c. water
- 6 egg whites
Method
- Sift flour, baking powder and salt three times or more. Cream shortening.
- Add sugar and cream until fluffy.
- Add dry ingredients alternately with liquid, lastly fold in stiffly beaten egg whites.
- Bake at 350° in three 9-inch layers.
- Wonderful for fresh coconut, using 7 minute icing.
