Ingredients

  • 3 c. sifted flour
  • 1/2 tsp. salt
  • 2 c. sugar
  • 1 tsp. lemon flavoring
  • 1 tsp. vanilla flavoring
  • 3 tsp. baking powder
  • 3/4 c. shortening
  • 1/2 c. milk plus 1/2 c. water
  • 6 egg whites

Method

  • Sift flour, baking powder and salt three times or more. Cream shortening.
  • Add sugar and cream until fluffy.
  • Add dry ingredients alternately with liquid, lastly fold in stiffly beaten egg whites.
  • Bake at 350° in three 9-inch layers.
  • Wonderful for fresh coconut, using 7 minute icing.
