- 4 bacon strips, diced
- 1 large onion, chopped
- 1/3 c. dry lentils
- 1 1/3 c. water
- 2 Tbsp. ketchup
- 1 tsp. garlic powder
- 3/4 tsp. chili powder
- 1/2 tsp. ground cumin
- 1/4 tsp. dried red pepper flakes
- 1 bay leaf
- 1 (16 oz.) can whole tomatoes with liquid, chopped
- 1 (15 oz.) can pinto beans, drained
- 1 (16 oz.) can kidney beans, drained
Method
- Lightly fry bacon in a heavy, 3-quart saucepan.
- Add onion; cook until transparent.
- Stir in remaining ingredients; cook over medium heat for 45 minutes, or until lentils are tender, stirring once or twice.
- Remove bay leaf before serving.
- Yields 8 to 10 servings.
