Ingredients

  • 4 bacon strips, diced
  • 1 large onion, chopped
  • 1/3 c. dry lentils
  • 1 1/3 c. water
  • 2 Tbsp. ketchup
  • 1 tsp. garlic powder
  • 3/4 tsp. chili powder
  • 1/2 tsp. ground cumin
  • 1/4 tsp. dried red pepper flakes
  • 1 bay leaf
  • 1 (16 oz.) can whole tomatoes with liquid, chopped
  • 1 (15 oz.) can pinto beans, drained
  • 1 (16 oz.) can kidney beans, drained

Method

  • Lightly fry bacon in a heavy, 3-quart saucepan.
  • Add onion; cook until transparent.
  • Stir in remaining ingredients; cook over medium heat for 45 minutes, or until lentils are tender, stirring once or twice.
  • Remove bay leaf before serving.
  • Yields 8 to 10 servings.
