Ingredients

  • 1/2 cup brown ale or other dark beer
  • 1 cup white cheddar cheese shredded
  • 1 teaspoon dijon mustard
  • dash worcestershire sauce
  • 2 slices rustic bread hearty
  • 2 fresh chives chopped
  • dash paprika

Method

  • Turn on broiler to preheat, and arrange the top rack about 4 inches from the heating element. While broiler heats up, mix beer in a small bowl with shredded cheddar cheese, mustard, and Worcestershire sauce.
  • Place bread on a baking sheet, then spread equal amounts of cheese mixture onto bread. Put baking sheet on the top oven rack and broil, watching closely, until cheese bubbles, about 4-5 minutes.
  • Top toasts with chives and a light sprinkle of paprika and serve immediately.
