Ingredients

  • 3 lbs. beef short ribs
  • 2 cans tomatoes, undrained (1 pound 12 ounce. size)
  • 2 teaspoon salt
  • 2 bay leaves
  • Vegetables as desired - 3 c. (green beans, corn, Lima beans, e.g.)
  • 1 c. minced onion
  • 1/2 c. barley (raw)
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil
  • 1 clove garlic, crushed

Method

  • Put ribs, tomatoes, salt, bay leaves and 1 qt water into large kettle.
  • Cover and bring to boil.
  • Reduce heat and simmer 2 hrs, covered.
  • Add in vegetables, onion, barley, herbs and garlic.
  • Simmer, covered, one hour or possibly till vegetables are tender.
  • Remove ribs, ?????
  • meat and return to soup.
  • Chill several hrs.
  • Before heating, skim fat from surface.
  • Heat slowly.
  • Makes 3 qts.
