Ingredients

  • 8 ounces penne
  • 1 cup grape tomatoes, halved
  • 12 cup red onion, diced
  • 14 cup basil leaves, washed and torn
  • 13 cup mozzarella cheese, cut into bite-sized cubes
  • 1 garlic clove, minced
  • 2 tablespoons olive oil
  • 14 cup parmesan cheese
  • salt
  • pepper

Method

  • In a large salted pot of water, cook penne according to package instructions less 1 minute.
  • Drain but reserve 1/4 cup of the pasta water.
  • Heat oil in a large skillet over medium high heat and add onion.
  • Cook until translucent.
  • Reduce heat to medium and add garlic and tomatoes.
  • Season with salt and pepper.
  • Cook for about 3-4 minutes.
  • Add pasta and pasta water to the skillet.
  • Add cheeses and stir well.
  • Turn off heat.
  • Add basil.
  • Toss and serve.
  • Often I will also add a sprinkle of pine nuts when serving.
