Ingredients
- 8 ounces penne
- 1 cup grape tomatoes, halved
- 12 cup red onion, diced
- 14 cup basil leaves, washed and torn
- 13 cup mozzarella cheese, cut into bite-sized cubes
- 1 garlic clove, minced
- 2 tablespoons olive oil
- 14 cup parmesan cheese
- salt
- pepper
Method
- In a large salted pot of water, cook penne according to package instructions less 1 minute.
- Drain but reserve 1/4 cup of the pasta water.
- Heat oil in a large skillet over medium high heat and add onion.
- Cook until translucent.
- Reduce heat to medium and add garlic and tomatoes.
- Season with salt and pepper.
- Cook for about 3-4 minutes.
- Add pasta and pasta water to the skillet.
- Add cheeses and stir well.
- Turn off heat.
- Add basil.
- Toss and serve.
- Often I will also add a sprinkle of pine nuts when serving.
